If you’re a fan of morel mushrooms and cheese and chicken and vegetables, hehe, you’re in for a treat. This recipe for turli tava is merely a distant cousin, black sheep, of the traditional turli tava, and a variation of my recently published something like turli tava recipe.

This is a variation of the traditional Macedonian dish Turli Tava, but with a twist using morel mushrooms and non-traditional ingredients like soy sauce :). Yes, perhaps a masacre of an original dish, but a tasty one.

Ingredients
400g chicken breasts, diced
5 medium sized morel mushrooms
1 large leek onion, sliced
2 cloves of garlic, finely chopped
2 coloured fresh bell peppers, diced
1 fennel bulb, sliced
5 carrots, sliced
2 tablespoons soy sauce
Handful of Edam cheese (or similar melting substitute)
1 tsp paprika powder, curry powder and pepper
Water, as needed
Salt, to taste
Directions
- Preparing Meat
- Cut the chicken breasts into bite-sized pieces.
- In a large pan or deep frying pan, heat a little oil over medium heat.
- Add the chicken breast cubes and cook until lightly browned on all sides. Remove the chicken from the pan and set aside.
- In the same pan, add a little more oil if necessary or butter.
- Preparing Morel Mushrooms
- Melt the butter in a saucepan and sauté the morel mushrooms.
- Add the cleaned morel mushrooms to the pan.
- Due to potential intolerance caused by morel mushrooms, I tend to be extra cautious and cook them for at least 15 minutes. However, for this dish, it isn’t necessary to cook them that long; 10 minutes should suffice, finishing the cooking in the next steps.
- Remove the sautéed mushrooms to the side and prepare the vegetables.
- Preparing Vegetables
- Chop the fennel and carrots.
- Slice the leek, chop the garlic cloves, and dice the bell peppers.
- Place all the vegetables in the frying pan and season generously with salt.
- Sauté the sliced vegetables until soft and aromatic. Keep some water handy and add a drizzle each time the vegetables start to stick to the pan. Repeat until the carrots are cooked but still firm.
- Add finely diced garlic. Stir well to combine with the rest of the vegetables.
- Combining all together
- Return the cooked chicken to the saucepan with the vegetables.
- Add the sautéed morel mushrooms to the mixture.
- Incorporate the soy sauce.
- Stir until well combined and simmer for an additional 2-3 minutes.
- Once the chicken and vegetables are cooked, preheat the oven.
- Melting the cheese
- Pour the contents of the pan into an ovenproof dish.
- Sprinkle the shredded Edam cheese (or a similar substitute) over the mushroom chicken and vegetable mixture.
- Place the dish under the grill for a few minutes until the cheese is melted and bubbly. Keep an eye on it to prevent burning.
- Once the cheese is melted and bubbling, remove the baking dish from the oven.
- Serve the One Pot Chicken and Vegetable Medley hot, straight from the oven.
- Enjoy your tasty and cheesy meal!
Notes
- Serve the medley warm. This will enhance the flavours and make for a comforting meal.
Experimenting with morel mushroom turli tava
You can experiment with all kinds of vegetables. For this recipe you will need the following basic ingredients: morels, carrots, leeks, peppers, fennel and soy sauce.
In Macedonian turli tava, pork loin is often the meat of choice. And traditional turli tava typically includes a variety of seasonal vegetables such as onions, peppers, green beans, Brussels sprouts, okra, mushrooms, potatoes and broccoli.
And yes, no mention of soy sauce. That one’s on me 😀
Can I use different types of mushrooms for this recipe? Ofcourse! While morel mushrooms add a unique flavour, you can experiment with your favourite varieties such as button, shiitake or portobello mushrooms.
Can I make this dish ahead of time? Of course you can! Prepare the dish until you are ready to add the cheese, then chill. When ready to serve, sprinkle on the cheese and place under the grill until bubbly and golden.
Can I add other vegetables to this recipe? Absolutely! Feel free to add your favourite vegetables or use up what you have in the fridge. Broccoli, zucchini or spinach would all be lovely additions, and for a more traditional approach to this dish, consider adding vegetables such as onions, peppers, green beans, brussels sprouts, okra, mushrooms, potatoes and broccoli.
