Some dinners need a plan. This one only needs an oven. Sweet potatoes go in to turn soft and caramelised, a tray of spiced chickpeas roasts underneath until it crunches like a snack, and a two-minute tahini sauce ties it all together.

The result is a warm, filling plate that happens to be vegetarian, naturally gluten-free and very easy to make vegan. It is exactly the kind of meal we like on a grey autumn evening: colourful, cheap, and done while you set the table.

Why You’ll Love This Sweet Potato and Chickpea Dinner

  • Hands-off cooking: about 10 minutes of prep, the oven does the rest.
  • Three textures in one bite: creamy sweet potato, crunchy chickpeas and a silky sauce.
  • Pantry friendly: a can of chickpeas, a few spices and a jar of tahini.
  • Flexible: vegetarian as written, vegan by default, and gluten-free.

What Do You Need for Baked Sweet Potatoes with Chickpeas?

Sweet potatoes: medium ones (around 300 g each) bake evenly in 35–40 minutes. Halving them first cuts the baking time and gives you caramelised edges.

Chickpeas: canned are perfect here. Rinse them well and, most importantly, dry them properly — that is the whole secret to crunch.

Spices: smoked paprika and cumin give a gentle, smoky warmth that loves the sweetness of the potato.

For the sauce: tahini, lemon, a little garlic and fresh parsley. Nothing else.

How Do You Get Roasted Chickpeas Really Crispy?

  • Dry them really well. Wet chickpeas steam instead of roast. Roll them in a kitchen towel and let them air-dry for a few minutes if you have time.
  • Pop off loose skins. You do not have to peel every chickpea, but the loose skins burn before the chickpeas crisp.
  • Give them space. A single layer on the tray, no crowding.
  • Shake halfway. They brown evenly and do not stick.

How to Make a Quick Tahini Herb Sauce

Whisk tahini with lemon juice, grated garlic and a pinch of salt. Do not panic when it seizes up and turns thick — that is normal. Add cold water a spoonful at a time and keep whisking; it suddenly turns smooth, pale and pourable. Stir in chopped parsley and taste for lemon and salt.

Soft, caramelised sweet potato, crunchy spiced chickpeas and a lemony tahini herb sauce. A cosy vegetarian dinner with almost no hands-on time.

Ingredients

  • 2 medium sweet potatoes (about 300 g each)

  • 1 can chickpeas (400 g), drained and rinsed

  • 1 tbsp olive oil, plus a little for the potatoes

  • 1 tsp smoked paprika

  • ½ tsp ground cumin

  • ½ tsp salt

  • Tahini herb sauce
  • 3 tbsp tahini

  • Juice of ½ lemon

  • 1 small garlic clove, finely grated

  • 3–4 tbsp cold water

  • 2 tbsp fresh parsley, finely chopped, plus extra to serve

  • A pinch of salt

Directions

  • Heat the oven to 200 °C (180 °C fan). Halve the sweet potatoes lengthwise, rub the cut sides with a little olive oil and place them cut side down on a lined baking tray.
  • Pat the drained chickpeas completely dry with a clean kitchen towel and pick off any loose skins. Toss them with the olive oil, smoked paprika, cumin and salt, then spread them in a single layer on a second tray.
  • Bake the sweet potatoes for 35–40 minutes until soft all the way through. Roast the chickpeas on the shelf below for 25–30 minutes, shaking the tray halfway, until golden and crunchy.
  • For the sauce, whisk the tahini with the lemon juice, garlic and salt. It will thicken at first — add the cold water one spoon at a time until it is smooth and pourable, then stir in the parsley.
  • Turn the sweet potato halves over and fluff the flesh with a fork. Pile the crispy chickpeas on top, drizzle generously with the tahini herb sauce and finish with extra parsley. Serve warm.

Notes

Chickpeas lose their crunch as they cool and soak up the sauce, so add them and the sauce just before serving.

Serving Ideas and Easy Swaps

  • Serve with a crisp green salad or a spoon of plain yogurt (if you are not keeping it vegan).
  • Swap parsley for coriander, dill or a mix of fresh herbs.
  • Add a pinch of chilli flakes to the chickpeas for heat.
  • No sweet potatoes? Roasted pumpkin or butternut squash halves work just as well.

Can You Make It Ahead?

Yes. Bake the sweet potatoes and roast the chickpeas up to two days ahead and keep them separately in the fridge. Re-crisp the chickpeas for 5 minutes in a hot oven, warm the potatoes, and make the sauce fresh (or store it in a jar and loosen it with a splash of water).
