Defatted peanut flour: What’s that?
I wanted to make sugar-free peanut butter cookies based on a keto-friendly recipe I found online. However, I didn’t have access to defatted peanut flour, so the original recipe was out of the question. But I didn’t give up. I decided to make them anyway, and luckily they turned out great on the first try.
And voila! Here is the recipe for these keto-friendly cookies, which at least resemble the ones in the picture. They are delicious, crunchy, filling and healthy – perfect for a low-carb, high-fat (LCHF) diet.

Ingredients
1 cup shelled peanuts (about 200g)
1 cup hazelnuts (about 150g)
1 egg
1 teaspoon baking powder
1/3 teaspoon stevia powder(to taste)
30g room temperature butter
Directions
- Toast the peanuts in a frying pan. Once toasted, finely chop them in a food processor.
- Toast the hazelnuts in the same pan. Transfer the hot hazelnuts to a tea towel and rub them together to remove most of the skin.
- Put the toasted hazelnuts in a food processor and finely chop.
- In a bowl, mix the hazelnut and peanut flour you just got with the stevia and baking powder.
Using an immersion blender, blend the peanuts and hazelnuts until smooth. If desired, blend for a shorter time to leave some small nut pieces. - Add the beaten egg to the peanut and hazelnut butter. Mix well with a fork or immersion blender.
- Add the butter and mix well.
- Preheat the oven to 180°C(350°F).
- Line a baking sheet with parchment paper.
Transfer the dough onto the parchment paper and shape into a rectangle of equal thickness.
Cut the dough into the shapes you like. You can also use a knife to cut into squares. - Bake the cookies for about 15 minutes. They are ready when the edges are firm.
- Remove from the oven and allow to cool before separating into individual cookies.
