This recipe is a great base for all your quick mushroom dinners! This recipe is for two people, but you can easily adapt it to be a serving for one person by halving all the ingredients. It always turns out amazing, so I hope you enjoy it!

Ingredients

  • – 350g (12.3 oz)store bought or homemade fettuccine pasta

  • – 2 scallions

  • – 1 small onion

  • – 50g butter (1.8 oz)

  • – 200g chanterelle mushrooms (7 oz)

  • – 2.5 ml heavy cream (0.5 tsp)

  • – 2 eggs

  • – Salt and pepper to taste

  • – Grated Parmesan cheese, Fresh parsley for garnish (optional)

Directions

  • Cook the pasta
  • Cook the pasta in boiling water according to the package instructions until al dente. Drain and set aside.
  • When making homemade fettuccine, boil water and add the pasta in batches. Avoid adding all the pasta at once. Once the pasta rises to the surface, it’s cooked. Remove it from the water and cook the remaining batches.
  • Cook the mushrooms
  • Finely chop the scallions and onion.
  • Clean the chanterelle mushrooms and cut them into pieces.
  • Melt the butter in a large skillet.
  • Add the chopped onion and scallions and sautĂ© until translucent and slightly golden, about 5 minutes.
  • Add the chanterelle mushrooms and cook until tender and golden brown, about 7-10 minutes.
  • Cook the creamy sauce
  • In a small bowl, whisk together the eggs and heavy cream until well combined.
  • Reduce the skillet heat to low.
  • Add the cooked pasta to the skillet and toss with the vegetables and mushrooms.
  • Pour the egg and cream mixture over the pasta and stir constantly to create a sauce. Make sure the heat is low to prevent the eggs from scrambling.
  • Season with salt and parsley to taste.
  • Cook for an additional 2-3 minutes, stirring gently until the sauce thickens.
