I make these easy-to-make spinach and cheese puff rolls for my kids’ school lunch: a delicious combination of fresh spinach, cream cheese and store-bought flaky puff pastry rolled into a savory delight.

Ingredients

  • 150g -200 g fresh spinach (about 5.3 -6 oz)

  • 250g Quark or any cream cheese (about 8.8 oz)

  • 2 eggs

  • Puff pastry sheets (there is gluten free option too)

  • Salt to taste

Directions

  • Preheat the oven to 400°F (200°C).
  • In a bowl, combine the fresh* spinach and the cream cheese. Add salt to taste.
  • Spread out the store-bought puff pastry pastry sheet.
  • Spread the spinach and cheese mixture on the pastry.
  • Fold the dough into a roll.
  • Cut the roll into 5cm (2-inch) pieces.
  • Place the pieces on a baking sheet lined with parchment paper, turning them so that the spinach is visible. Spread them lightly to give them a nicer shape.
  • Bake for 20-25 minutes or until golden brown.
  • Allow to cool completely before serving.

  • *You can also use frozen spinach. However, you will need to thaw and drain the spinach first.
