Crepe style pancakes are one of those simple culinary treasures, just grab some eggs, milk and flour and you have delicious breakfast.

I’d like to pretend that my thin crepe style pancakes recipe is some sophisticated family secret passed down through generations, but let’s be real – every household in Europe makes them the same way, just with slight variations in the egg and flour proportions!

I can promise you, my thin pancakes recipe from scratch will give you perfect crepe like pancakes every time. You can mess them up as much as you like, once they’re baked they’ll taste amazing 😉

On Sunday mornings our house is filled with the delicious smell of freshly baked thin pancakes. Although I sometimes make American-style pancakes, the delicate crepe style pancakes are really our family tradition.

As I watch my children grow older every year, our weekly pancake breakfast means more and more to me. I want my children to always associate the smell of baked pancakes with home and family.

I’d like to pretend that my crepe style pancakes recipe is some sophisticated family secret passed down through generations, but let’s be real – every household in Europe makes them the same way, just with slight variations in the egg and flour proportions!

Ingredients

  • 3 eggs

  • 200g (1.5 cups) flour

  • 500ml (2 cups) milk

  • Pinch of salt

  • Oil for baking

Directions

  • In a mixing bowl, throw in all of the listed ingredients for the Easy Crepe Style Pancakes Batter
  • Add a pinch of salt to enhance the flavor of the crepes.
    Mix well until all the ingredients are combined and the batter is smooth. You can use a hand whisk or an electric mixer for this step. Using electic mixer will prevent clumps in your Batter
  • Let the batter rest for about 15-20 minutes. This resting period allows the flour to fully hydrate and results in softer crepes.
  • Cooking the Crepes:
  • Heat a non-stick skillet or crepe style pancake pan over medium heat. You can lightly grease the pan with a bit of butter or oil, or use cooking spray.
  • Once the pan is hot, ladle a small amount of the batter onto the center of the pan. Quickly lift and tilt the pan in a circular motion to spread the batter evenly and thinly across the surface. The crepes should be quite thin.
  • Cook the crepe for about 1-2 minutes, or until the edges start to lift slightly and the bottom is golden brown.
  • Carefully flip the crepe using a spatula and cook for an additional 1 minute on the other side. It should be lightly golden.
  • Slide the cooked crepe onto a plate and continue with the remaining batter. Stir the batter with a ladle between each pancake. You can stack the baked crepes on top of each other.
  • Crepes can be served with a variety of fillings and toppings. Popular options include jam, fresh fruits, whipped cream, yogurt, or a sprinkle of powdered sugar. You can get creative and customize them to your preference.

On Sunday mornings you’ll find me in the kitchen at 8am mixing eggs, milk and flour to make the crepe style pancakes batter. I think I’m an expert crepe maker, but getting just the right amount of batter on the pan to make a thin pancake never works! I always have to add more batter (better to start with less than end up with a thick, doughy pancake). Once the non-stick pan is hot, I “expertly” pour the batter on and quickly spread it out before it sets.

By the time the delicious smell wakes the children, the crepes are piled up on the table, ready for toppings like jam, fruit or whipped cream. There’s a lot of chatting and laughing as we gather around the table to eat our crepe style pancakes and sip our coffee (hot chocolate for kidos).
Even if the crepes don’t always go off perfectly, coming together every Sunday and making new memories is what really counts.

Of course, I could do without the kids arguing about who gets more whipped cream each week! But, yeah, some things never change.
