Ingredients
- For the Morel Mushrooms
8 ounces (about 250 grams) fresh morel mushrooms, cleaned and sliced
2 tablespoons olive oil
- For the Salsa Pomodoro
1 cup canned tomatoes (crushed or whole)
1 teaspoon dried oregano
1/2 teaspoon salt (to taste)
- For the Cheese Mixture
2/3 cup grated Edamer cheese (or similar, such as Gouda or Cheddar)
1/3 cup grated Parmigiano Reggiano (Parmesan) cheese
1 cup grated mozzarella cheese
- Other Ingredients
1 pound (about 500 grams) pizza dough
2 tablespoons wild garlic pesto
Directions
- To Prepare the Morel Mushrooms
- Clean the morels by gently brushing off any dirt or debris with a soft brush or cloth. Slice the morel mushrooms into bite-sized pieces.
- Heat a skillet or frying pan over medium heat. Add a drizzle of olive oil or butter to the pan and swirl to coat the bottom evenly.
- Add the sliced morel mushrooms to the pan in a single layer, making sure they are not overcrowded.
- Allow the mushrooms to cook, stirring occasionally, until tender and lightly browned, about 10-12 minutes. Season with salt and pepper to taste.
- Salsa Pomodoro
- In a small saucepan, combine the canned tomatoes, dried oregano, and salt.
- Cheese Mixture
- In a bowl, mix together the grated Edamer, grated Parmigiano Reggiano, and grated mozzarella until well combined. Set aside.
- Pizza
- Preheat the oven to 230°C (450°F). If using a pizza stone, place it in the oven to heat.
- Roll out the pizza dough on a lightly floured surface to the desired thickness.
- Spread the prepared Salsa Pomodoro evenly over the pizza dough.
- Arrange the cooked morel mushrooms on top of the sauce.
- Sprinkle the prepared cheese mixture over the mushrooms.
- Place the assembled pizza in the preheated oven and bake for 7-8 minutes.
- Remove the pizza from the oven and spread the wild garlic pesto evenly over the top.
