With just 5 ingredients and minimal preparation, these appetisers are easy to make and taste great. Let’s get started!

Ingredients

  • 400 g fresh Chanterelle mushrooms

  • 3 Garlic Cloves

  • 1 Cup Olive oil

  • Puff pastry sheets (there is gluten free option too)

  • Parsley to taste

  • Salt to taste

Directions

  • Prepare the chanterelles
  • Clean the chanterelles thoroughly. You can use a soft brush to remove any dirt or debris.
  • Cut the mushrooms into bite size slices.
  • Sauté the mushrooms
  • Heat a drizzle of olive oil in a large frying pan over a medium heat.
  • Add the sliced chanterelles and cook until they release their juices and turn golden brown. Add salt to taste.
  • When cooked, remove from the heat.
  • Cover the sautéed mushrooms with olive oil, chopped garlic and parsley.
  • Mix until the mushrooms are evenly and completely covered.
  • Prepare the puff pastry
  • Preheat the oven to 200°C.
  • Roll out the puff pastry on a lightly floured surface.
  • Spread the sautéed chanterelles evenly over the pastry.
  • Roll out and cut
  • Carefully roll up the mushroom filling sheet of puff pastry, starting from one edge.
  • Once rolled, cut the log into 1cm thick slices to make pinwheels.
  • Place the pinwheels on a baking sheet lined with greaseproof paper.
  • Brush the tops with a little olive oil for a nice golden finish.
  • Bake in a preheated oven for about 15-20 minutes or until golden and crispy.

How to make mushroom pinwheels even better?

Enhance the flavour

  • White wine: Add a splash of white wine to the chantrelle mushrooms while sautéing. This adds a bright, acidic note that enhances the natural flavours of the chanterelles.

  • Parmesan cheese: Sprinkle grated Parmesan over the chanterelle mushrooms before rolling the dough. This adds a sharp, nutty flavour that complements the mushrooms beautifully.
  • Gruyère cheese: Grated Gruyère has a creamy, slightly sweet flavour that melts perfectly and adds a delicious layer of cheese to the pinwheels.

No chanterelles? No problem, mushroom pinwheels can also be made with other types of mushrooms.

Chanterelle mushrooom substitutes

  • Cremini mushrooms: If you can’t find chanterelles, cremini mushrooms are a great alternative. They have a meaty texture and a robust, earthy flavour that works well in this recipe.
  • Shiitake mushrooms: Shiitake mushrooms have a rich, umami flavour. They add depth and a unique savoury note, making them an excellent substitute for chanterelles.
  • Oyster Mushrooms: With a delicate texture and mild flavor, oyster mushrooms work well as a substitute. They also have a lovely, slightly nutty taste.

Herbs to add or replace that I know work

  • Thyme: Fresh or dried thyme adds a subtle, earthy flavour that pairs beautifully with mushrooms. Sprinkle it over the mushrooms while sautéing.
  • Rosemary: Rosemary adds a piney, aromatic flavour. Use it sparingly as its strong flavour can quickly overpower a dish. Add a few finely chopped leaves to enhance the overall aroma and flavour.
