150g (5.3oz) cherry tomatoes, halved
1/2 large red onion, chopped
100g (3.5oz) pickled cucumbers, diced
250ml (1 cup) sour cream
4 hard boiled eggs, chopped
2 tablespoons mayonnaise
Salt, to taste
250g (8.8oz) pasta, cooked and cooled
Directions
- Cook 250g (8.8oz) of pasta according to package instructions until al dente.
- Prepare the dressing while the pasta is cooking
- Drain the can of tuna and flake with a fork.
- Halve the cherry tomatoes.
- Chop the red onion and pickled cucumbers.
- Chop the hard-boiled eggs.
- In a large mixing bowl, add the cooled pasta, flaked tuna, cherry tomatoes, diced red onion, diced pickled cucumber and chopped hard-boiled eggs.
- In a small bowl, whisk together the sour cream and mayonnaise until smooth.
- Pour the dressing over the pasta mixture and toss gently to combine.
- Season to taste with salt and mix well.
