Ingredients

  • 300g (10.5oz) canned tuna

  • 150g (5.3oz) cherry tomatoes, halved

  • 1/2 large red onion, chopped

  • 100g (3.5oz) pickled cucumbers, diced

  • 250ml (1 cup) sour cream

  • 4 hard boiled eggs, chopped

  • 2 tablespoons mayonnaise

  • Salt, to taste

  • 250g (8.8oz) pasta, cooked and cooled

Directions

  • Cook 250g (8.8oz) of pasta according to package instructions until al dente.
  • Prepare the dressing while the pasta is cooking
  • Drain the can of tuna and flake with a fork.
  • Halve the cherry tomatoes.
  • Chop the red onion and pickled cucumbers.
  • Chop the hard-boiled eggs.
  • In a large mixing bowl, add the cooled pasta, flaked tuna, cherry tomatoes, diced red onion, diced pickled cucumber and chopped hard-boiled eggs.
  • In a small bowl, whisk together the sour cream and mayonnaise until smooth.
  • Pour the dressing over the pasta mixture and toss gently to combine.
  • Season to taste with salt and mix well.
  • Cover and chill for at least 30 minutes to allow the flavours to meld.
  • Serve chilled.
