What is a kebab?

The term ‘kebab’ refers to a wide variety of grilled or roasted meat dishes that originated in the Middle East. It is widely consumed around the world and has cross-cultural relevance due to its presence in different cuisines. The kebab recipe varies between cultures and regions, but often involves marinating meat in a mixture of spices and cooking it over an open flame.

Different countries and cultures have their own variations of kebabs, such as Turkish, Indian kebabs or Greek souvlaki, each with unique flavours and preparation methods.

Of course, since we’re making it at home, we want them to be convenient and not too hard to make, right? So here’s my friend’s recipe. I don’t really know where it came from originally. I played around with the spices and quantities to see what worked. And came up with this perfection. Hope you like it!

Ingredients

  • 1 kg (2.2lbs) ground meat (minced meat)

  • 2 tablespoons salt

  • 1 tablespoon turmeric

  • 1 tablespoon dried smoked paprika powder

  • 1 tablespoon garlic powder

  • 2 tablespoons dried parsley

  • 2 tablespoons dried Basil

  • 2 teaspoons white pepper

  • Wrapping foil

  • Cooking oil (for frying)

  • For the White Sauce
  • Garlic, finely chopped

  • Salt

  • 1 cup sour cream

  • For Serving
  • Pita bread

  • Fresh red onion rings

  • Pomodoro (plum tomatoes)

  • Pickled cucumber

  • Fresh cucumber

  • Salad, cut into ribbons

Directions

  • Prepare the kebab Mixture
  • In a large mixing bowl, combine the ground meat, salt, turmeric, smoked paprika powder, garlic powder, dried parsley, white pepper and dried Basil.Kebab Recipe Ground Meat
  • Mix the ingredients thoroughly until well combined.
  • Shape and Freeze
  • Place the kebab mixture on a sheet of wrapping foil. Using foil, form the mixture into a cylinder shape, wrap it tightly in the foil, and place it in a deep freezer.

  • Frying the kebab meat
  • Once completely frozen, remove the kebab cylinder from the freezer and unwrap it.
  • Use a knife to scrape small slices of meat from the frozen cylinder.Kebab Recipe Slices
  • Heat oil in a pan over medium-high heat.
  • Fry the kebab chunks in smaller portions. Cook them immediately while they are still frozen; avoid letting the meat defrost.
  • Prepare the White Sauce
  • In a bowl, mix finely chopped garlic, salt, and sour cream. This will be the white sauce for the kebab.
  • Serve – (skip this part if you are on keto diet)
  • Bake pita bread on leftover oil. On baked pita bread, spread the white sauce.
  • Top with the cooked kebab meat, fresh red onion rings, tomato slices, pickled cucumber, fresh cucumber, and ribbons of salad.
