Ingredients
400 grams (about 14 ounces) cleaned and dried Wood Cauliflower Mushroom (S. Crispa)
3 medium-sized potatoes
1 finely chopped red onion
2 scallions (green and white parts)
3 eggs
Bread crumbs (gluten free bread crumbs for gluten free version)
Salt and white pepper (to taste)
Oil (for frying)
Directions
- Peel and grate the potatoes using a coarse grater. Place the grated potatoes in a bowl and add a pinch of salt. Let them sit for about 15 minutes to allow excess liquid to be released. (while waiting, you can prepare the mushrooms ;))
- After 15 minutes, use a clean kitchen towel to squeeze out as much liquid as possible from the grated potatoes. Or yeah, you can also squeeze with your hand 🙂
- Prepare Mushrooms
- In a skillet, heat a small amount of olive oil over medium heat. Add the finely chopped red onion and cook until it becomes soft and golden.
- Once the onions have achieved a lovely golden hue, it’s time to add the Wood Cauliflower Mushroom. Sauté the Wood Cauliflower Mushroom for about 8-10 minutes until it’s tender and lightly browned.
- Combine mushrooms and potatoes
- Transfer the drained potatoes to a mixing bowl. Season the potatoes with white pepper to taste (about 1/2 teaspoon or to your preference).
- Add the sautéed mushrooms and chopped scallions.
- Add about 50 grams of bread crumbs to the mixture.
- Crack the eggs into the bowl. Stir well to ensure all ingredients are combined. If the mixture is not holding its shape for patties, add more bread crumbs carefully, one spoon at a time, taking breaks to check the consistency.
- Take a portion of the mixture and shape it into a patty or fritter. Coat each fritter with bread crumbs for a crispy outside texture.
- Frying
- Heat oil, add a good finger’s worth of oil, in a frying pan over medium-high heat. Carefully place the fritters in the hot oil.
- Fry until they are golden brown and crispy on both sides, about 3-4 minutes per side. You may need to do this in batches to avoid overcrowding the pan. Add more oil as needed between batches.
- Once cooked, remove the fritters from the pan and place them on paper towels to drain any excess oil.
- Serve the Wood Cauliflower Mushroom fritters hot with your favorite dipping sauce or alongside a fresh salad.
