  • Toast your favourite bread
  • As the bread is toasting, cut an avocado in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork until slightly chunky or smooth.
  • Season the avocado generously with salt and pepper. Mix well. More pepper means more metabolism-boosting heat!
  • Fry two eggs in a frying pan with oil or butter over a medium heat. Season the eggs with salt and pepper.
  • Spread the mashed avocado thickly over the toast.
  • Top each piece of toast with an egg.
  • Finish with optional extras like tomatoes, cilantro, hot sauce. Get creative – you can’t go wrong!
  • Season with more salt and pepper. Enjoy your toast immediately for the perfect balance of flavors and textures.

Notes

  • Optionally, you can make a great guacamole dip and spread it on the toasted bread instead of step 2. If you don’t mind a bit of garlic breath 😀
  • You can cook your eggs any way you like. In the avocado toast with egg recipe, I’ve suggested fried egg, but in the picture, I’ve presented poached egg, boiled egg, and scrambled egg.
