Celeriac Schnitzel is a great twist on the classic schnitzel! Celery root, gives a deliciously nutty flavor that’s perfect for a satisfying, meat-free schnitzel.

Ingredients

  • For Celeriac Schnitzel
  • 1/2 large celery root (celeriac), peeled and sliced thin (about 1/4 inch thick)

  • 2 eggs

  • 5 Tbsp milk

  • 4 heaping Tbsp flour (about 1/3 cup / 50 g)

  • Breadcrumbs (enough for coating)

  • Salt, nutmeg, and white pepper, to taste

  • Vegetable oil, for deep frying

  • For the Dip
  • 1/2 cup sour cream (4 oz / 120 ml)

  • 2 Tbsp mayonnaise (1 oz / 30 ml)

  • 1/2 tsp salt

  • 1/2 tsp dried parsley

  • 1/2 tsp dried dill

Directions

  • Prepare the Celery Root
  • Start by peeling the celery root. Slice it into thin, half-circle slices, about 1/4 inch (0.5 cm) thick. Set aside.
  • Set Up Your Breading Station
  • In one bowl, beat the eggs with milk, a pinch of salt, a dash of nutmeg, and a bit of white pepper. Add the flour and mix well to form a runny batter.
  • In a second bowl, pour the breadcrumbs.
  • Bread the Celery Root
  • Dip each celeriac slice into the batter mixture, then coat with breadcrumbs, pressing slightly to ensure they stick well.
  • Deep Fry the Schnitzels
  • Heat vegetable oil in a deep pan or pot to about 350°F (175°C). Fry the breaded celeriac slices in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
