Ingredients
250g (8.8 oz) Wild Blueberries
250g (1 cup) Soft Butter
100g (3/4 th cup) Sugar
1 tsp Vanilla Extract (or package of Vanilla Sugar)
1 pinch of Salt
4 Eggs (Size M)
250g (1 cup) Flour
2 tsp Baking Powder
Directions
- Wash, clean the wild blueberries.
- In a bigger mixing bowl, beat the soft butter, sugar, (Vanilla Sugar if using) and salt until the mixture becomes thick and creamy.
- Add 2 eggs together, beat both eggs into the mixture for about 1 minute. Add next two eggs and do the same for them. Add vanilla extract.
- Mix the flour, and baking powder together and gently stir this dry mixture into the butter-egg mixture.
- Add 2/3 of the Blueberries into the Batter.
- Grease a baking pan and dust it with flour, or use baking paper if this is what you prefer. Spread the cake batter evenly in the pan.
- Distribute the rest of the wild blueberry evenly over the batter.
- Preheat the oven to 200°C (392°F).
- Bake the cake in the preheated oven for 30 to 40 minutes, or until the top is golden brown.
- Allow the cake to cool, then optionally sprinkle powdered sugar over the top before serving.
