This recipe is my adaptation of the recipes you can find all over the internet if you google 90 second keto bread. My motivation for this keto adaptation was to avoid all the expensive ingredients that the recipes call for.
Especially since there are so many ingredients we already have around the house that we can just grind up and use whenever we need them.
Also, all those recipes you find for keto bread are basically keto adaptations of the cupcake recipe :). So nothing new.

It takes just 5 minutes, including preparation and baking time. It can be even quicker if you quickly grab the ingredients from your pantry. This bread is delicious and has a texture reminiscent of traditional bread.

Ingredients

  • 1/2 cup finely ground almond flour (grind your own, any combination of nuts will work – video shows flax seed & almonds)

  • 1 egg, beaten

  • 1/4 teaspoon baking powder

  • 1 tablespoon olive oil

  • 1/2 teaspoon salt

  • 2 tablespoons water

  • 1 microwave-safe ceramic mug

Directions

  • In a bowl, mix together the almond flour, eggs, baking powder, olive oil, salt and water until you have a smooth batter. You can make your own ground nut mixture or use store-bought keto flour.
  • Make sure the consistency of the batter is similar to that of American pancakes. If necessary, thin the batter with more water or milk.
  • Make sure the mug is large enough as the bread will rise during baking. The dough should not fill more than half of the mug.
  • If you have more dough, divide it into several baking rounds. Place one tray at a time in the microwave and cook for 90 seconds on the highest power setting. Repeat for each mug. The bread should rise and set.
  • Allow the bread to cool for a few minutes before removing from the cups.
