Ingredients
- Dough
300g flour
100g melted butter
100ml warm water
Pinch of salt
- Filling
250g Quark or curd cheese
500g Wild Blueberry
80g-120g powdered sugar (adjust according to your desired sweetness)
2 eggs
1 teaspoon of vanilla extract
Directions
- In a large mixing bowl, combine the flour and a pinch of salt. Pour in the melted butter and warm water. Stir the mixture until a dough starts to form. Shape the dough into a ball.
- Boil water and add it to a bowl to heat it up. Wipe the bowl with excess water and place the dough inside the warm bowl to rest for 30 minutes, covered with a clean kitchen towel.
- While the dough is resting, prepare the filling. In a separate bowl, combine the Quark, eggs, powdered sugar, and vanilla extract. Add the wild blueberries and mix everything together until well combined. Set aside.
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- Once the dough has rested, transfer it onto a lightly floured surface and roll it out into a rectangular shape, aiming for a thickness of about 2-3mm.
- Spread the filling evenly over the rolled-out dough, leaving a small border around the edges.
- Carefully roll up the dough from one side, like a jelly roll, tucking in the edges as you go. Place the rolled strudel onto the prepared baking sheet, seam-side down.
- Bake the strudel in the preheated oven for approximately 40-45 minutes or until it turns golden brown and the filling is cooked through.
- Remove the strudel from the oven and allow it to cool slightly before slicing and serving.
- Optionally, dust the strudel with some powdered sugar before serving. You can enjoy it warm or at room temperature.
- Serve the wild blueberry strudel with Quark with a scoop of vanilla ice cream for a delightful pairing. Alternatively, enjoy it with a cup of tea or coffee.
