The cauliflower is sliced into steaks. It is seasoned and oven-baked until it achieves a tender yet crispy texture. Even meat-lovers will enjoy it, especially when drizzled with a rich, creamy tahini sauce.

Ingredients

  • 1 large head of cauliflower

  • 1 teaspoon salt

  • 1 teaspoon paprika

  • 1 teaspoon curry powder

  • Parmesan cheese (to taste)

  • Tahini Ingredients
  • 1 cup sesame seeds

  • Olive oil (to taste)

  • Salt (to taste)

Directions

  • Roasted Cauliflower Stakes
  • Preheat the oven to 200°C (400°F).
  • Slice the cauliflower into thick, steak-like pieces.
  • In a small bowl, mix together olive oil, salt, paprika and curry powder to make a flavoursome marinade.
  • Place the cauliflower steaks on a baking tray and brush each one generously with the marinade. Make sure they are well coated.
  • For an extra layer of deliciousness, sprinkle the cauliflower steaks with Parmesan cheese. The cheese will melt and form a savoury crust during baking.
  • Bake the cauliflower steaks for 20-25 minutes or until tender and golden brown.
  • Tahini Instructions
  • In a frying pan, toast the sesame seeds over a medium heat until they are fragrant and lightly golden. Keep stirring to avoid burning.
  • Transfer the toasted sesame seeds to a bowl.
  • Pour a generous amount of olive oil over the sesame seeds. The oil will bind the seeds together and create a creamy consistency.
  • Add salt to taste. Tahini should strike a balance between nutty and salty.
  • Using a hand blender, blend the sesame seeds and olive oil to a smooth paste. Adjust the consistency by adding more olive oil if necessary.
  • Arrange the cauliflower steaks on a plate. Just before serving, drizzle the tahini sauce over the cauliflower steaks to ensure they are moist and flavorful.
