Amazing Clear Porcini Mushroom Soup

Ingredients
1 small onion, finely chopped
3 cloves garlic, minced
2 carrots, julienned (cut into matchstick shapes)
1/2 zucchini, diced
2 smaller potatoes, julienned (cut into matchstick shapes)
200g porcini mushrooms, cleaned and sliced (fresh or frozen)
1 tablespoon porcini powder
1/2 fresh red bell pepper, julienned (cut into matchstick shapes)
1/2 cup vegetable broth (or mushroom broth, or water)
1 tablespoon soy sauce
3 scallions, sliced
Salt and pepper to taste
Directions
- In a large saucepan, heat some oil over medium heat. Add the chopped onion and minced garlic. Cook until the onion is translucent.
- Add the diced zucchini to the pot. Cook over low heat until the zucchini is softened and mushy.
- Add the sliced carrots and potatoes. Saute until they begin to adhere to the bottom of the pot, allowing the vegetables to form a delicious coating. Add sliced bell peppers.
- Pour in the vegetable stock (or mushroom stock) to deglaze the pot, making sure to scrape up any flavorful bits stuck to the bottom.
- Add enough broth to cover the vegetables about three fingers up. Stir in the sliced porcini and porcini powder.
- Cover and simmer over low heat until the vegetables are cooked but still firm. This may take 20-25 minutes.
- Season to taste with salt, pepper, and paprika powder. Add a tablespoon of soy sauce for depth of flavor.
- Finally, stir in the sliced scallions and let the soup simmer for an additional 2-3 minutes to allow the flavors to meld.
- Taste and adjust seasoning as needed.
