Ingredients

  • 1/2 kg chicken breast

  • 2 dcl heavy cream

  • 2 tablespoons of dried porcini mushrooms – soaked for at least 15 minutes before cooking

  • Homemade chicken marinade
  • 3 tablespoons olive oil

  • 2 cloves of garlic

  • 1 teaspoon curcuma powder

  • 1 teaspoon powdered paprika

  • 1 teaspoon dried parsley

  • Salt and pepper to taste

Directions

  • Directions for the marinade
  • Whisk all the ingredients together in a bowl.
    Place the chicken breasts in a zip-top bag or shallow dish and pour the marinade over.
    Ensure that the chicken is well coated, close the bag or cover the dish and marinate in the fridge for at least 30 minutes, preferably overnight to enhance the flavor.
  • Preparation
  • After marinating the chicken, preheat a frying pan over a medium heat.
  • Cook the chicken breasts in the pan until golden brown and cooked through, about 6-8 minutes per side. When cooked through, remove the chicken breast from the pan and set aside.
  • In the same pan, add the heavy cream and dried porcini mushrooms. Don’t throw away the soaking liquid from the dried porcini. Add it to the sauce along with the cream. Stir well to combine.
