This heartier version of mushroom powder soup can be customized even further with additional spices or proteins like tofu or chicken, making it an adaptable, comforting dish for any season.

Ingredients

  • 2 tablespoons mushroom powder (shiitake or a blend of your choice)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tablespoons olive oil

  • 4 cups vegetable broth(mushroom, chicken broth)

  • 1 large parsnip, peeled and chopped

  • 1 big (2 smaller carrots) peeled and chopped

  • 3 medium potatoes, peeled and cubed

  • 1/2 cup cream or coconut milk (optional, for creaminess)

  • Salt and pepper to taste

  • Fresh herbs for garnish (thyme, parsley, or chives)

Directions

  • Heat the olive oil or butter in a large pot over medium heat. Add the chopped onion and garlic, cooking until soft and fragrant (about 3-4 minutes).
  • Stir in the chopped parsnip, carrots, and potatoes. SautĂ© the vegetables for about 5 minutes, allowing them to soften slightly.
  • Pour in the vegetable, mushroom broth or chicken broth. Stir well to combine the vegetables and bring the mixture to a simmer.
  • Once the broth is simmering, stir in the mushroom powder, ensuring it dissolves fully into the liquid. Let the soup simmer for about 15 minutes, or until the vegetables are tender.
  • Remove the pot from the heat. Use an immersion blender to carefully blend the soup directly in the pot until it reaches your desired smoothness.
