Do you love porcini mushrooms? Then you will love this mushroom pate. It is made with dried porcini mushrooms and fresh champignons.

Ingredients

  • 1 onion, cut into small pieces

  • 4 garlic cloves, peeled and chopped

  • 1 green onion, chopped

  • 400g champignon mushrooms (Agaricus bisporus), washed and cut

  • 3 tablespoons dry porcini mushrooms (Boletus Edulis), soaked in hot water for 15 minutes and cut

  • 1/2 cup cheese, grated

  • Parsley, chopped

  • Salt and pepper

  • Oil

Directions

  • Get the mushrooms ready:
  • Wash and cut the champignon mushrooms.
  • Put the dry mushrooms in hot water for 15 minutes, then drain and cut them.
  • Cook the onion, garlic, and green onion:
  • Put some oil in a big pan over medium heat.
  • Add the onion and cook until it is soft.
  • Cook the mushrooms:
  • Add the champignon mushrooms to the pan and cook until they are brown and dry.
  • Add the soaked dry mushrooms, and soaking water and cook for 5-7 more minutes.
  • Add the minced garlic and chopped scallion, continuing to sauté for another 2-3 minutes until fragrant.
  • Don’t let the mushroom water evaporate completely, stop cooking when thick juice remains on the pan.
  • Add salt and pepper:
  • Sprinkle some salt and pepper on the mushrooms.
  • Make the pesto:
  • Let the mushrooms cool down a little.
  • Put the mushrooms, cheese, and parsley in a blender.
  • Blend until it is smooth. If it is too thick, add some olive oil.
  • Taste and adjust:
  • Try the pesto and add more salt and pepper if you want.
  • Serve:
  • Put the pesto in a bowl.
  • You can eat it right away or keep it in the fridge for later.
