Ingredients

  • For the crust:

  • 100g (3.5 oz) butter

  • 2 eggs

  • 250g (8.8 oz) almond flour

  • 2 tablespoons psyllium husk powder

  • 1 teaspoon salt

  • 1/2 teaspoon baking powder

  • For the filling:

  • 50g (1.8 oz) grated Parmesan cheese

  • 500g (17.6 oz) Ricotta cheese (cottage cheese works well too, or regular fresh semi-hard cheese)

  • 200g (7 oz) spinach (thawed and drained of liquid if using frozen spinach)

  • 100g (3.5 oz) sour cream

  • 5 eggs

Directions

  • Cut the butter into small pieces. Add eggs, almond flour, psyllium husk powder, salt, and baking powder. Knead the mixture until you have a soft and smooth dough. Place the dough in the refrigerator for about 1 hour to firm up the butter.
  • Roll out the dough and place it in a round baking dish, allowing it to hang slightly over the edges. Prick the dough with a fork and bake for about 10 minutes at 200°C(392°F).
  • Meanwhile, prepare the filling. Beat the 5 eggs, sour cream, cheeses, and spinach together. Season the mixture with salt, pepper, and thyme (if desired). Pour the filling onto the partially baked crust.
  • Place the dish in the oven at 200°C (392°F) and bake for about 40-50 minutes.
