Ingredients

  • 600g (1.32 lbs) ground beef
    1 Table spoon salt

  • 1 Table spoon paprika powder

  • 1 teaspoon Turmeric Root Ground

  • 1 teaspoon garlic powder seasoning (or two cloves of finely chopped fresh garlic)

  • 1 teaspoon white pepper ground

Directions

  • In a mixing bowl, combine the ground beef, paprika powder, turmeric powder, garlic powder (or freshly chopped garlic), and white pepper. Mix well to evenly distribute the seasonings throughout the meat. You can adjust the seasonings to taste.
  • Continue mixing and squeezing the meat; the best way is to use your hands. You can use gloves if you prefer, but I like to do everything with my bare hands.
  • Keep squeezing until the meat starts to stick together, and you can easily form nice patties.
  • Let the meat rest for 20-30 minutes while you prepare the buns and hamburger filling.
  • Once the meat has cooled down, divide the meat mixture into equal portions and shape them into hamburger patties. You can make them slightly larger than the size of your buns, as they will shrink a little during cooking. I use my hands to form equally sized balls and then flatten each one between two pieces of clear plastic wrap.
  • Preheat your grill or frying pan over medium heat. You can also use a grill pan for indoor cooking.
  • If using a barbecue, lightly oil the grates to prevent sticking. Place the homemade hamburger patties on the grill and cook for about 2-3 minutes on each side, depending on the thickness of your burger patties. You can adjust the cooking time depending on how well done you like your homemade hamburger patty to be.
  • Once the hamburger patties are cooked to your liking, remove them from the grill or pan and allow them to rest for a few minutes.
  • Assemble your burger by placing a cooked patty on the bottom half of a burger bun. Add your favorite toppings such as lettuce, tomato, onion, cheese, and condiments. In this example, I’ve used baked chanterelle mushrooms. You can use any mushrooms you have on hand; they will elevate a simple burger into a gourmet dish.
  • Top with the other half of the burger bun and serve your homemade burgers without egg warm.

Smash burgers are typically cooked quickly over high heat, which caramelises the surface of the meat and creates a unique texture and flavour profile.

What More can be Done to my Burgers Without Egg?

Burger Meat selection: Beyond beef, explore ground turkey, chicken, pork or delve into the world of plant-based options like mushroom or black bean patties. Variety is the spice of life!

Seasoning makes or breaks a burger: Salt, pepper and turmeric are fine, but let’s expand the flavour spectrum. Add chilli powder, Italian herbs, smoked paprika – season to your discerning palate.

Fresh ingredients: Embrace the addition of freshly minced onion, grated cheese, minced garlic or the aromatic allure of herbs such as parsley or coriander. Freshness is the ultimate ingredient.

Play with textures: sauté some chanterelles, tawny milkcaps, boletes or champignons, dice some peppers or infuse the essence of crispy bacon bits. Different textures give your homemade patties an enticing dime.
