  • 1 oz (28 g) dried porcini mushrooms

  • 1 cup (240 ml) hot water

  • 2 tbsp (30 g) unsalted butter

  • 1 small onion, finely diced

  • 2 cloves garlic, finely diced

  • 2 tbsp (8 g) fresh parsley, finely chopped

  • 1/4 tsp (1.5 g) salt, or to taste

  • 1/4 tsp (1.5 g) freshly ground black pepper, or to taste

  • 1/2 cup (120 ml) reserved porcini soaking liquid

  • 1-2 tbsp (15-30 g) extra butter for creaminess

Directions

  • Rehydrate the Dried Porcini Mushrooms
  • Place the dried porcini mushrooms in a bowl and pour the hot water over them. Let them sit for about 20 minutes until softened.

  • Stir in the chopped, rehydrated porcini mushrooms. Cook for 1-2 minutes to incorporate their flavor and bring the mixture to a simmer.
  • Reduce the heat to low and let the sauce simmer gently for 5-7 minutes, stirring occasionally, until it thickens slightly and has a silky consistency.
  • Finish the Sauce
  • Stir in the chopped parsley and cook for 1 minute.
  • Add 1-2 tbsp (15-30 g) extra butter and stir until melted and well combined. Adjust the seasoning with additional salt and pepper.
  • Serve
  • Spoon the porcini mushroom sauce generously over grilled or pan-seared steak.
  • Serve immediately with roasted potatoes, steamed vegetables, or crusty bread for a hearty, comforting meal.
