Ingredients
3 potatoes, peeled and diced
1 large sweet potato, peeled and diced
1 scallion, finely chopped
1 onion, finely chopped
2 garlic cloves, finely chopped
2 handfuls of frozen porcini mushrooms
2 handfuls of fresh yellow foot mushrooms, cleaned
Salt and pepper to taste
4 cups water (adjust as needed)
Directions
- Peel and dice the regular potatoes and sweet potato into bite-sized pieces.
- Finely chop the scallion, garlic, and onion.
- In a large pot, heat a tablespoon of oil over medium heat.
- Add chopped onion, sauté until translucent.
- Add the diced regular potatoes and sweet potato to the pot. Stir well. When they start to stick to the bottom, it’s time to add the mushrooms.
- Add frozen porcini mushrooms and sliced yellow foot mushrooms to the pot. Cook until the mushrooms release their moisture.
- Pour in enough water to cover everything. Adjust the amount based on your desired consistency for the stew. Cover the pan and cook for 20 minutes over medium to low-medium heat.
- Add garlic to the pot.
- For a thick and creamy soup, remove 2-3 spoonful of potatoes and sweet potatoes, then puree them with a fork.
- Season the mixture with salt and pepper according to your taste. Stir again to ensure even distribution of the seasoning.
- At the end of the cooking, add finely chopped scallion.
- Ladle the Yellow Foot and Porcini Mushroom Stew into bowls and serve hot with toasted bread. If you enjoy a bit of heat, melt butter, add chili, and bake slices of bread on chili-infused butter.
