This culinary adventure began in the middle of preparing stuffed zucchini. As I embarked on this flavourful journey, I was faced with the usual dilemma of ensuring that the meat filling was perfectly seasoned before placing the zucchini in the oven to bake. To put my creation to the test, I decided to fry a small patty as a taste test. What happened next was a pleasant surprise – the patty turned out so well that I couldn’t resist adding mushrooms to the mix. The result? A delicious fusion of flavours that promises to raise your barbecue game.

Whether you’re planning a barbecue with friends, grilling kebabs (ćevapi) or craving minced meat kebabs (šiš-kebabs), these zucchini and mushroom patties are your ticket to culinary bliss. And if you’re feeling adventurous, a touch of chilli adds just the right kick.

Elevate your Classical Burger Patty with savoury zucchini, beef and mushroom patties (best to use porcini or portobello mushrooms). Incredibly versatile dish.

Ingredients

  • 1/2 zucchini

  • 8.8 ounces (250 g) ground beef

  • 1.8 ounces (50 g) Porcini Mushrooms or portobello mushrooms

  • 1 egg

  • 1 large onion

  • 2 cloves of garlic

  • Ground red paprika

  • Salt and white pepper, to taste

  • Cooking fat

Directions

  • In a Food Processor, finely chop the mushrooms, onion, and garlic. Process them until they are quite finely chopped.
  • Finely chop the zucchini in a Food Processor, salt to taste and set aside. Drain the liquid after 15 minutes.
  • In a mixing bowl, combine the chopped mushroom mixture and drained zucchini with the ground meat. Season with ground red paprika, salt, and white pepper to your taste. Mix thoroughly to ensure even distribution of ingredients.
  • Beat the egg and add it to the mixture, binding everything together. Form the mixture into evenly-sized patties.
  • Heat a skillet or frying pan over medium-high heat and add cooking fat. Once the fat is hot, carefully place the patties in the pan.
  • Cook the patties for about 4-5 minutes on each side, or until they turn a beautiful golden brown and are cooked through.
  • Serve your zucchini and mushroom patties with a side of your favorite vegetables or alongside some delicious pizza eggplants.
