Homemade Hamburger Patties Without Egg

All you need is some good quality ground beef, a pinch of salt, some spices and boom – you’ve got yourself a homemade no egg hamburger patty, no binders, and without any of those artificial flavors or preservatives.

Ingredients

  • For Hamburger Patties without Egg
  • 600g (1.32 lbs) ground beef

  • 1 Table spoon salt

  • 1 Table spoon paprika powder

  • 1 teaspoon Turmeric Root Ground

  • 1 teaspoon garlic powder seasoning (or two cloves of finely chopped fresh garlic)

  • 1 teaspoon white pepper ground

  • For Buns:

Directions

  • In a mixing bowl, combine the ground beef, paprika powder, turmeric powder, garlic powder (or freshly chopped garlic), and white pepper. Mix well to evenly distribute the seasonings throughout the meat. You can adjust the seasonings to taste.
  • Continue mixing and squeezing the meat; the best way is to use your hands. You can use gloves if you prefer, but I like to do everything with my bare hands.
  • Keep squeezing until the meat starts to stick together, and you can easily form nice patties.
  • Let the meat rest for 20-30 minutes while you prepare the buns and hamburger filling.
  • Once the meat has cooled down, divide the meat mixture into equal portions and shape them into hamburger patties. You can make them slightly larger than the size of your buns, as they will shrink a little during cooking. I use my hands to form equally sized balls and then flatten each one between two pieces of clear plastic wrap.
  • Preheat your grill or frying pan over medium heat. You can also use a grill pan for indoor cooking.
  • If using a barbecue, lightly oil the grates to prevent sticking. Place the homemade hamburger patties on the grill and cook for about 2-3 minutes on each side, depending on the thickness of your burger patties. You can adjust the cooking time depending on how well done you like your homemade hamburger patty to be.
  • Once the hamburger patties are cooked to your liking, remove them from the grill or pan and allow them to rest for a few minutes.
  • Assemble your hamburger by placing a cooked patty on the bottom half of a hamburger bun. Add your favorite toppings such as lettuce, tomato, onion, cheese, and condiments. In this example, I’ve used baked chanterelle mushrooms. You can use any mushrooms you have on hand; they will elevate a simple burger into a gourmet dish.
  • Top with the other half of the pizza dough bun and serve your homemade burgers warm.
  • For Buns
  • Dust a clean surface with flour and separate your pizza dough into 5-6 pieces, depending on the thickness of your homemade hamburger buns or the size of the burger patties.
  • Form the pizza dough to your desired thickness for burger buns.
  • You can bake the pizza dough for the buns on a pizza stone. If you have a pizza stone, preheat it in the oven to the maximum temperature of your oven, or according to the pizza stone package instructions.

  • Place the bun dough on the hot pizza stone and bake until golden brown and cooked through, mine took about 5 minutes.

Homemade burger patties truly drool-worthy tips and tricks

You’ve got the basics down, but now it’s time to flex our creative muscles and make these homemade burger patties truly drool-worthy

  • Meat selection: Beef is just the beginning, try ground turkey, chicken, pork or even mushroom or black bean patties for a plant-based spin. Variety is the spice of life!
  • Seasoning: Salt, pepper and turmeric are fine, but let’s up the flavour profile. Mix in chilli powder, Italian herbs, smoked paprika – season to your taste.
  • Fresh ingredients: Don’t be afraid to add freshly finely chopped onions, grated cheese, minced garlic or herbs like parsley or coriander. The freshness adds so much.
  • Play with textures: sauté some Chanterelle, Tawny Milkcaps, Boletes, Champignon mushrooms, dice some peppers or fry some crispy bacon bits. Different textures make these homemade patties pop.
  • Cheese stuffed: Stuff cheese cubes right in the centre? Genius move. Gouda, cheddar or pepperjack takes these patties to the next level.
  • Size and shape: Make these patties as big, small, thick or thin as you like. Just remember – thicker patties require a little extra grilling time.
  • Toppings and sauces: Now we’re talking! Pile on the lettuce, tomato, avocado, caramelised onions, fried eggs – go non-traditional. Don’t forget the sauces – aioli, chimichurri, homemade ketchup – make it your own.
There you have it – a basic patty taken to new heights.
