This is a variation of the traditional Macedonian dish Turli tava, but with a twist using non-traditional ingredients. I’ve included vegetables that my family enjoys eating and added soy souce at the end, lol, and melted cheese on top of it too ;). But I promise, as strange as it sounds this is tested recipe and works every time.

Ingredients
400g chicken breasts, diced
1 large leek onion, sliced
2 cloves of garlic, finely chopped
2 coloured fresh bell peppers, diced
1 fennel bulb, sliced
5 carrots, sliced
2 tablespoons soy sauce
Handful of Edam cheese (or similar melting substitute)
1 tsp paprika powder, curry powder and pepper
Water, as needed
Salt, to taste
Directions
- Cut the chicken breasts into bite-sized pieces.
- Slice the leek onion, chop the garlic cloves and dice the bell peppers.
- Chop the fennel and carrots.
- In a large pan or deep frying pan, heat a little oil over a medium heat.
- Add the chicken breast cubes and cook until lightly browned on all sides. Remove the chicken from the pan and set aside.
- In the same pan, add a little more oil if necessary.
- Place all the vegetables in the frying pan and season generously with salt.
- Sauté the sliced vegetables until soft and aromatic. Keep the water ready and add a drizzle of water each time the vegetables start to stick to the pan. Repeat until the carrots are cooked but still very firm.
- Add finely diced garlic. Stir well to combine with the rest of the vegetables.
- Return the cooked chicken to the saucepan.
- Add the soy sauce.
- Stir until well combined, and simmer for 2-3 minutes more.
- Melt the cheese
- When the chicken and vegetables are cooked, preheat the oven to a low roast.
- Pour the contents of the pot into an ovenproof dish.
- Sprinkle the shredded Edam cheese (or similar substitute) over the chicken and vegetable mixture.
- Place the dish under the grill for a few minutes until the cheese is melted and bubbly. Keep an eye on it to avoid burning.
- Once the cheese is melted and bubbling, remove the baking dish from the oven.
- Serve the One Pot Chicken and Vegetable Medley hot, straight from the oven.
- Enjoy your tasty and cheesy meal!
