Chanterelle FAQ
What do chanterelles taste like?
Fruity and slightly peppery, with an apricot-like smell and a firm, meaty bite. They go best with butter, cream, garlic, onions and fresh herbs.
Do you need to cook chanterelles?
Yes. Always cook wild mushrooms well before eating them. Sauté chanterelles first to cook off their water, then add them to the dish.
Can you use dried chanterelles in these recipes?
Yes, in soups, sauces, risotto and fillings like the ravioli. Dried chanterelles stay a little chewy, so chop them finely. See how to dry mushrooms at home.
Can you freeze chanterelles?
Yes. Clean them, then either blanch them for 1–2 minutes or freeze them raw. Cook them straight from the freezer – never thawed. Full guide: how to freeze chanterelle mushrooms.
What is the difference between chanterelles and winter chanterelles?
Golden chanterelles grow in summer and early autumn and are fleshy. Winter chanterelles (yellowfoot) appear in late autumn, have a hollow brown cap and a yellow stem, and are thinner and more delicate.
