Ingredients
1/2 red bell pepper (about 70g/2.5 oz)
1/2 green bell pepper (about 70g/2.5 oz)
1 leek, finely chopped (about 180g/6.3 oz)
1 zucchinis (about 240g/8.5 oz)
4 tablespoons sour cream (60g/2.2 oz)
200g grated cheese (7 oz)
4 tablespoons finely ground almonds (40g/1.4 oz)
6 eggs
Turmeric, salt, oregano (to taste)
1 tablespoon cooking fat
Directions
- Dice the red and green bell peppers into small pieces.
- Finely chop the leek.
- Grate the zucchinis, sprinkle with a little salt, and let them sit to release excess moisture. Squeeze out any excess water and mix the grated zucchinis with the rest of the vegetables.
- Add sour cream, grated cheese, ground almonds, and season with turmeric, salt, and oregano according to your taste.
- In a separate bowl, lightly whisk the eggs.
- Gradually add the vegetable mixture, sour cream, cheese, and spices to the beaten eggs.
- Preheat the oven to 180°C (350°F), with heat only from the top.
- Grease and heat a frying pan, then pour in the egg and vegetable mixture. Cook covered on the stovetop for about 10 minutes, or until the edges are cooked.
- Transfer the pan to the preheated oven and bake until the top of the frittata is golden brown.
- Remove from the pan, place on a plate, and serve with a side of seasonal salad.
