Ingredients

  • For the Burgers
  • 2 1/2cups (600g) ground beef (preferably 80/20 for juiciness)

  • 1 tablespoon kosher salt

  • 1 tablespoon paprika powder

  • 3 teaspoons dried porcini mushroom powder

  • 1 teaspoon garlic powder seasoning (2 cloves of fresh garlic, finely chopped)

  • 1 teaspoon ground white pepper

  • Olive oil (for sautĂ©ing and roasting)

  • 4 brioche burger buns, lightly toasted

  • For the Add-ons
  • 4-5fresh porcini mushrooms, sliced

  • 2 medium tomatoes, sliced

  • 2 red bell peppers, roasted and peeled

  • 1 small red onion, thinly sliced

  • 1 cup arugula (rucola) salad

  • For The Garlic Souer Cream
  • 1/2cup sour cream

  • 2 tablespoons mayonnaise

  • 2 cloves garlic, minced (for the garlic-infused sour cream)

Directions

  • Season the Ground Beef
  • In a large bowl, combine the ground beef with the salt, paprika, porcini mushroom powder, garlic powder (fresh garlic), and white pepper. Mix gently but thoroughly to evenly distribute the seasonings. Divide the mixture into four-six equal portions and shape each into a patty.
  • Let it rest while you prepare the other ingredients.
  • Prepare the Garlic-Infused Sour Cream
  • In a small bowl, combine sour cream, mayonnaise and minced garlic cloves. Stir until well combined.
    Cover and refrigerate, allowing the flavors to meld while you prepare the rest of the meal.
  • Roast the Bell Peppers
  • Preheat your oven to 425°F (220°C). Lightly coat the red bell peppers in olive oil, place them on a baking sheet, and roast for 20-25 minutes, turning occasionally until the skin is charred and blistered. Remove from the oven, place in a bowl, and cover with plastic wrap. After 10 minutes, peel off the skins, remove the seeds, and slice them into strips.
  • SautĂ© the Fresh Porcini Mushrooms
  • Heat a tablespoon of olive oil in a skillet over medium heat. Add the sliced fresh porcini mushrooms and sautĂ© until golden brown and tender, about 5-7 minutes. Season lightly with salt and set aside.
  • Cook the Burgers
  • Heat a grill over medium-high heat. Lightly oil the grill grates. Cook the patties for about 4-5minutes per side, or until they reach your desired level of doneness (160°F for medium). Avoid pressing down on the burgers to keep them juicy.
  • Assemble the Burgers
  • Start by spreading a generous layer of the garlic-infused sour cream on the bottom half of each toasted brioche bun.
  • Place a burger patty on top, followed by sautĂ©ed porcini mushrooms, roasted red pepper slices, fresh tomato slices, and red onion rings.
  • Finish with a handful of arugula and the top half of the bun.
