One of my favourite ways to prepare salmon is to steam it, accompanied by a medley of seasonal, lightly steamed vegetables. It’s really a piece of cake – throw everything together, steam to perfection and you have a delicious and simple meal. But there’s a delightful twist to this story.
You see, there are times when we find ourselves with a surplus of this tasty fish. And in those instances, I embrace creativity and turn those leftovers into something truly special – Salmon Patties.
Mediterranean Salmon Patties – Leftovers Fish Burger Patty

Ingredients
350 grams (12.3 ounces) steamed salmon (leftovers)
2 medium-size eggs
1/2 cup (50 grams) breadcrumbs – for keto version use almon flour
1/2 teaspoon salt
Finely chopped fresh basil leaves
Finely chopped parsley leaves
2 tablespoons vegetable oil (for frying)
Directions
- Place the steamed salmon in a mixing bowl, making sure there are no bones or skin.
- Add the eggs, breadcrumbs, salt, chopped basil and parsley leaves to the chopped salmon. Mix until well combined. The mixture should hold together when you form a patty. If it feels too wet, add a little more breadcrumbs to get the right consistency.
- Shape the patties: Divide the mixture into six equal portions if making finger-thick fish burger patties. Or, if serving with salad, divide into 8 equal pieces. I usually take a spinfull for each salmon patty. You can make them round or oval if you like.
- Heat the vegetable oil in a frying pan over a medium heat. The oil should be hot but not smoking.
- Carefully drop the salmon patties into the hot oil. Fry for about 3-4 minutes on each side or until crisp and golden. Make sure to turn them gently.
- When the patties are cooked through and have a nice golden colour, remove them from the oil and place them on a plate lined with kitchen paper to drain off any excess oil.
- Serve the salmon patties while they are still hot. They are delicious on their own, but you can also serve them with a fresh salad or a creamy dipping sauce for extra flavour, oooooor in a delicious Fishburger as a Fish Burger Patty

Microwave: To microwave salmon, place a salmon fillet in a microwave-safe dish, cover with a microwave-safe lid and microwave on medium heat (50% power) for about 2-3 minutes, adjusting the time to suit the wattage of your microwave and the thickness of the salmon. Check for doneness by ensuring that the salmon separates easily.
