150g (5.3oz) flour – for gluten free version use almond flour (ratio 1:1)
150g (5.3oz) dark chocolate
100g (3.5oz) sugar
100g (3.5oz) butter
2 lightly beaten eggs
Vanilla extract or vanilla sugar
100g (3.5oz) chopped walnuts
1/2 teaspoon baking powder
1/2 teaspoon salt
Directions
- Preheat the oven to 350°F (180°C) and prepare the baking pan – butter or line with parchment paper.
- Break the dark chocolate into pieces and combine with the butter in a heatproof bowl. Melt over simmering water until smooth. When smooth, remove from heat and allow to cool slightly.
- In another bowl, whisk the eggs and sugar together until light and fluffy. Stir in vanilla sugar, if using.
- Add melted butter and chocolate to eggs and mix.
- Sift flour and baking powder into the mixture, folding in gently. Don’t overmix; we’re aiming for brownie bliss, not brownie bricks.
- Toss chopped walnuts in the batter and fold them in gently. I always add a little extra chocolate. If you do, chop about 2 bars of dark chocolate and stir in with the walnuts.
- Pour the dough into the prepared 20x30cm (8x12in) pan, spreading it evenly with a spatula.
- Bake in the preheated oven for 20-25 minutes. Test with a toothpick – a few moist crumbs are fine.
- Once out of the oven, let your brownies cool in the pan. Patience, they will be worth the wait.
- Cut into squares or rectangles and there you have it – your homemade brownies! Serve on a plate or store in an airtight container for later (but seriously, you won’t have any leftovers, trust me).

- Doesn’t matter what kind of baking pan you use, make sure your brownies batter is no higher than 2-3 cm (not more than an inch). You want them baked but moist 😉
