This recipe is inspired by the traditional Breton pot from France, which is a hearty dish of meatballs and vegetables cooked in a broth. The broth is seasoned with salt, pepper and parsley, and you can also add some sour cream extra creaminess.

Meet Veggie Breton Pot with Meatballs – a tasty and wallet-friendly one-pot wonder.

Ingredients

  • For the vegetable soup
  • 1 finely chopped onion

  • 3 medium carrots

  • 1/2 cauliflower

  • 2 medium potatoes

  • 150 g peas (from a can (washed))

  • 1/2 liters vegetable broth

  • Salt, pepper, nutmeg

  • For the meatballs
  • 1 bagel (from the day before) or breadcrumbs*

  • 400 g ground meat

  • 2 tablespoons parsley

  • 1/2 teaspoon each salt, pepper, curry, paprika

  • 2 eggs

Directions

  • Peel and chop the onion. Wash carrots and cauliflower; peel and wash potatoes. Dice everything into bite-sized pieces.
  • In a large pot, sauté the onion in oil. Add the vegetables (except the peas) and brown util it starts to stick to the pot.
  • Add the broth and cook for about 10 minutes. Season to taste with salt, pepper and nutmeg.
  • For the meatballs, dice the roll and soak in water to soften. Peel and chop the shallot, then sauté in butter. Squeeze the water out of the roll and mix it with the ground meat, parsley, pepper, salt, paprika, curry, nutmeg, eggs.
  • Mix well and form small meatballs with wet hands.
  • When the soup comes to a boil, add the meatballs and peas. Reduce heat to a simmer and cook for 10 minutes.
  • Pour the vegetable soup with meatballs into a large serving dish or serve in four/five bowls.

Notes

  • If you do not have a bagel, you can use breadcrumbs as shown in the video. Add breadcrumbs carefully, 1/2 cup should be enough. When you can form meatballs without sticking to your fingers, you are ready to add them to the stew.
