If you fancy a juicy homemade mushroom & onions burger but can’t get your hands on some wild mushrooms or Chanterelle Mushrooms, don’t worry! There are plenty of delicious mushrooms in your local supermarket that’ll also do the trick.
Cremini mushrooms are a great option. They’ve got a great sort of nutty, earthy flavour and meaty texture that’s perfect for a burger.
Shiitake Mushrooms: Shiitake mushrooms have a strong and savoury flavour with a meaty texture. Clean the mushrooms and sauté as described for chanterelles in the recipe.
Portobello mushrooms: Portobello mushrooms are large and have a meaty texture. They can be grilled or fried whole, or sliced and sautéed as described for the chanterelles in the recipe.
Oyster mushrooms: Oyster mushrooms have a delicate, mild flavour and tender texture. They work well in sautés and can be torn into smaller pieces, sliced for your burger.
Button mushrooms: Button mushrooms have a mild flavour and are readily available. They work well in sautés and can be sliced or quartered.

- Caramelised onions
2 large onions, thinly sliced
2 tablespoons butter
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon sugar (optional)
- Sautéed chanterelle mushrooms
200g (8 oz) fresh chanterelles, cleaned and sliced
2 tablespoons butter
Salt and pepper to taste
- Additional Garnishes
Fresh cucumber slices
Scrambled eggs (cooked to your liking)
Sliced tomato
Ketchup or hot ketchup
Pickled cucumbers or pickled peppers
Directions
- Prepare and bake the homemade hamburger patties – below the recipe you will find some options for vegetable, fish and mushrooms burger patties.
- Make the caramelised onions
- Heat the olive oil and butter in a large frying pan over medium-low heat.
- Add the thinly sliced onions to the skillet and sprinkle with salt. The salt will help to draw the moisture out of the onions.
- Cook slowly, stirring occasionally, until the onions are golden brown and caramelised, about 30-40 minutes. If desired, add sugar to aid caramelisation. Adjust the heat as necessary to prevent burning.
- Sauté the chanterelles
- In a separate frying pan, melt 2 tablespoons of butter over a medium heat.
- Add the sliced chanterelles and cook for 5-7 minutes or until tender and lightly browned. Season to taste with salt and pepper.
- Assemble the burger
- Place the caramelised onions on the bottom half of toasted bun – you can also make homemade hamburger buns or buy Burger buns – for keto option: Keto Burger Buns.
- Place the cooked hamburger patty on top of the onions.
- Drizzle with ketchup or hot ketchup for an extra kick.
- Top with fresh cucumber slices, scrambled eggs and tomato slices.
- Add pickled cucumbers or pickled peppers for a spicy crunch.
- Finaly add, a generous helping, of sauteed chanterelle mushrooms
- Top with the other half of the bun.
