This LCHF (low carbohydrate, high fat) crepe recipe is a thin winner. Silky, savory, and satisfying, these crepes are primed to become your new favorite weeknight low-carb, high-fat treat. They have a similar taste to traditional crepe pancakes and can be enjoyed with a variety of combinations.

Ingredients

  • 100g (3.5oz) ricotta cheese

  • 3 eggs

  • Stevia or salt (to taste)

  • Butter for cooking

Directions

  • If you don’t have ricotta cheese, you can use cream cheese spread or a combination of cream cheese and sour cream. If using a combination, add just enough sour cream to thin the cheese. For 100g of cheese, add 1-2 tablespoons of sour cream.
  • Whisk the eggs with a fork, then add the spices and cheese. Whisk until smooth. The batter should be slightly thinner than traditional pancake batter.
  • Grease a crepe pan with butter and use a ladle to pour the batter onto the pan. Cook the crepes on both sides. Flip the crepes when they start to separate from the edges of the pan.
