 Pasta With Wild Garlic Pesto

Steps:

  1. Cook pasta according to pack
  2. Mix 1 cup cream + 2 eggs + 3 tbsp pesto
  3. Drain pasta, return to pot
  4. Add creamy garlic sauce, toss!
  5. Serve & enjoy!

Let’s make pasta with wild garlic pesto. You need pesto of course, pasta, eggs and cream. That is all. Salt to taste of course and you can eat 😉

Ingredients

  • 450g (about 3 cups) of your favorite pasta

  • 2 cups (4 deciliters) heavy cream

  • 3 eggs, lightly beaten

  • 3 tablespoons wild garlic pesto

Directions

  • Cook your favourite pasta according to the packet instructions.
  • While the pasta is cooking, mix the heavy cream, lightly beaten eggs and wild garlic pesto in a bowl. You can add more pesto, I don’t think you can go wrong at this stage, it really depends on your taste.
  • Once the pasta is cooked to your liking, simply drain it and return it to the pot.
  • Pour the wild garlic pesto mixture over the cooked pasta in the pot.
  • Gently toss the pasta with the sauce until it is well coated and heated through. Once the eggs are cooked enough, the sauce will thicken and you will have a deliciously creamy sauce.
  • Serve hot and enjoy the simplicity and deliciousness of wild garlic pasta!

Notes

  • If you like, you can add parmesan cheese at the beginning or during cooking.
  • At the end of cooking you can add extra dried or freshly chopped wild garlic leaves for extra flavour.

A few tips to consider when making this recipe

Choice of pasta: The recipe is versatile and will work with any type of pasta. Whether you prefer spaghetti, penne or fusilli, choose one that will hold the sauce well.
Amount of pesto: The recipe calls for 3-4 tablespoons of wild garlic pesto, but you can adjust this to taste.

Creaminess: For a richer, creamier sauce, experiment with the ratio of eggs to cream. Adding an extra egg can make the sauce thicker.
