Ingredients
500g (1.1lb) spinach (to keep Popeye happy)
250g (8.8oz) mushrooms
80g (2.8oz) hard cheese
Salt and pepper to taste
Directions
- Wash the spinach and mushrooms. Blanch the spinach in boiling water for about 5 minutes. Chop the mushrooms.
- Heat a frying pan and fry the mushrooms until cooked
- Chop the cooked spinach and mix with the mushrooms and cheese. Add the cheese while it is still warm so that it melts slightly.
- Fill the pancakes with this mixture. Roll or fold into triangles.
- If you like, you can lightly fry the pancakes in a frying pan to further combine the ingredients.
